Sometimes I just crave a good burger. These cravings can happen at any time and need to be satisfied quickly. As we were preparing for a weekend of camping, I got the hankering for a burger. That meant one thing, we were going to be making hamburgers at the campsite. I wanted to try something different, but easy so that we could make it while camping. I decided to blend my love for Mexican food with my love for burgers and make a spicy pico de gallo juicy lucy burger. I suggest everyone have at least one juicy lucy burger in there lives, but after you have one, you’ll definitely want more.

Juicy Lucy Preparation

The easy definition of a juicy lucy burger is a burger with cheese stuffed in the middle. Yes ooey, gooey, delicious cheese stuffed right in the middle of your burger. The first time I was a little hesitant to make them, thinking it would be pretty hard to get the cheese inside and seal the burger well. I did have a few issues the first time I made them, but have come up with a better plan of attack now.

To make the juicy lucy burger, you will need to make 2 patties for each burger. In this specific recipe, I add about a tablespoon of taco seasoning to the hamburger to give it some extra taste. The first patty should be the size of the burger you want, the second patty can be a bit smaller. Once you have the first patty ready, just create a nice little well in the middle of the burger, with the edges formed around it. You will then add about 2 tablespoons of the queso fresco cheese. Grab the second patty and cover the burger. Press down on all sides to seal the two patties together. Don’t be afraid to really push to get a good seal. No one wants that beautiful cheese draining out during cooking.

Preparing For The Campsite

I would suggest to make your burger patties ahead of time, freeze them in an air tight container and then put in your cooler. Once they are thawed you can make them for lunch or dinner. Overall that just makes life way easier. Who wants to spend a half hour at a picnic table making hamburger patties?

As for the pico de gallo, I like to make it homemade before we head out, there are only about 6 ingredients so it is easy to whip together. You can usually find it in stores pre-made if you want to go that route for the campsite. What really makes this burger stand out is the taco sauce and the extra slice of pepperjack cheese. We like to use a spicy taco sauce to give it that extra kick.

Ingredients
Juicy Lucy
  • 2 lbs ground beef
  • 12 oz queso fresco cheese
  • 1 tablespoon taco seasoning
  • 1 tablespoon water
  • 6 slices of pepperjack cheese
  • 6 hamburger buns
  • taco sauce, for topping
  • salt and pepper, to taste
  • lettuce, for topping
Pico De Gallo:
  • ¼ cup yellow or red onion, diced
  • 1½ cups tomatoes, diced
  • 1 small jalapeno, diced
  • 1 tablespoon garlic, minced
  • 2 tablespoons lime juice
  • 2 tablespoons cilantro, chopped (plus extra for garnish)
  • salt and pepper, to taste

Instructions
  1. Mix your hamburger with 1 tablespoon of water and 1 tablespoon of taco seasoning. Form 2 patties for each burger. Grab one patty and form a well in the middle.
  2. Spoon in about 2 tablespoons of the queso fresco. Cover with the second patty. Seal the edges really well.
  3. Chop all of your ingredients for the pico de gallo. In a separate bowl, combine all of your ingredients and set aside.
  4. Cook the burgers on a grill or grill grate for 6-10 minutes per side, or until desired doneness. When almost done, add a slice of pepperjack cheese.
  5. Before serving, add 1-2 tablespoons of taco sauce, ⅛ cup of pico de gallo and lettuce.
