No Cook Camping Lunches

Grab and go lunches are perfect for camping.

Often times camping means that the days are filled with activities. Kids are in and out and sometimes you just don’t have time to cook a meal. The other reason no cook lunches are handy is because maybe you don’t want to tend a fire all day. Here are a few easy and tasty ideas that take very little time to prepare.

The Bagel Tower

Ben and Marc are two friends of mine that swear by the bagel tower. It’s a pretty simple idea that makes it easy to make and haul multiple sandwiches. All you do is buy a bag of bagels, take them out, make sandwiches, and put them back in the bag. They make great no cook camping lunches and also don’t use any extra bags.

GORP 2.0

You’re probably familiar with “Good Ol’ Raisins and Peanuts,” or as it’s more commonly called GORP. It’s been popular since the sixties, and for good reason. It’s an easy way to get a blend of carbs, protein and fat for a quick energy boost. I’m not a big fan of raisins, so a few years ago I swapped them out for craisins. I also went for dark chocolate M&M’s instead of the regular ones. I was suprised at how much better it was! The dark chocolate and the cranberries are an awesome combo. I’ve found that two handfuls will often keep me going until dinner time.

Ingredients for GORP 2.0

Cashew Chicken Salad

Here’s a super delicious recipe that you can whip together at home and throw in the cooler. It’s refreshing and makes for a perfect no cook lunch on a hot day.

Cashew Chicken Salad

Serves: 4-6

Ingredients
  • 2 cups cooked chicken, chopped
  • 1 stalk celery, diced
  • ½ cup cashews
  • ½ – ¾ cup mayo
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh dill, chopped
  • salt and pepper to taste

Instructions
  1. Add chicken, dill, lemon juice, celery and cashews to a bowl and mix.
  2. Add mayo, beginning with ½ cup.
  3. Add more mayonnaise up to ¾ cup to the consistency you desire. Add salt and pepper and mix well.
