The Kids Camping Quesadilla is a hit!

Camping with kids is a trip all in itself. A lot more planning takes place before you head out knowing you will have children with you. One of the biggest sticking points is food. Cooking for kids can be much different and require more attention. I try to make easy camping meals for kids, and when I find a good one I hold on to it! These kids camping quesadillas are excellent, kids (and adults) love this easy meal. You can eat right out of your hands and the clean up is a snap!

Plus these quesadillas allow you to do some preparation at home to make your time at the campsite easier. If I don’t have a grill along, you can grill the steak and cut it up ahead of time. I also cut up any vegetables I plan on using and keep those in a sealed container. When it is time to make quesadillas I can just bring out the already cut ingredients and quickly make the meal!

KIDS CAMPING QUESADILLAS

INGREDIENTS:
1 lb Flank Steak
1 cup Pepperjack Cheese,
1 oz. Cilantro, chopped
10 tortillas, burrito size
½ cup salsa
Sour Cream
1 teaspoon garlic salt
salt and peper to taste
(optional, red/green pepper, onion, mushrooms)

DIRECTIONS:
Season your steak with garlic salt and some pepper. You can spice it up however you want, but we used less seasoning for our little one. Grill the steak to your desired result.

Slice the steak into strips (we did extra small pieces for our little one, easier for her to chew)

Take a tortilla, load your steak, cheese, salsa (looking for an easy homemade salsa? Click here) and other ingredients you wish, layer the shredded cheese on top. Place another quesadilla on top and grill for about 3 minutes a side, until the cheese is melted, the tortilla is a bit crispy and you have grill marks on the tortillas.

If you want to do this over the campfire, you can still enjoy the same results. The trick is to use one tortilla, pile on your ingredients, fold it like a burrito and wrap in the foil, Stick the foil packet in the coals of the campfire and let it cook about 3 minutes per side.
