Ingredients
- 1½ cups all-purpose flour
- 1½ cups whole wheat flour
- ¾ cup dark brown sugar
- ½ teaspoon kosher salt
- 1 cup butter, softened
- 3 tablespoons honey
- 1 teaspoon ground cinnamon
Instructions
- Using a stand up mixer: combine softened butter, brown sugar, honey and kosher salt – until well blended
- Add flours, ¼ cup at a time – alternating between all-purpose flour and whole wheat flour
- Layout a sheet of waxed paper, about the size of a large cookie sheet, place graham cracker dough onto waxed paper.
- Sandwich the mixture with another piece of waxed paper, and using a rolling pin – roll the dough into an ⅛” sheet.
- Cut the dough into crackers, and make 6 small holes in each cracker to allow even cooking
- Place the cut cracker sheet into the freezer for 30 minutes, allowing dough to freeze.
- Remove crackers from freezer, and transfer individually to a parchment paper-lined cookie sheet.
- Bake crackers for 10 minutes, until the tops start to brown.
- Remove from oven, and allow each cracker to cool.
- Store in an air-tight container until ready to eat.
