Dutch Oven Pigs In A Blanket Bake

Who doesn’t love the classic pigs in a blanket? I know my family does. It is a good recipe to make when camping but if you are really looking to do something different, we’d suggest this pigs in a blanket bake. It makes a seriously good breakfast casserole, right in your dutch oven.

This is an easy way to eat a pancake breakfast without the griddle! It is so darn good, I can’t even put it in to words. But the pancakes, syrup and melty cheese pretty much speak for themselves. I can say that it is really filling so it feeds a group well.

Dutch oven pigs in a blanket bake are sort of like luxurious french toast but made wit buttermilk pancakes instead of bread ... with the bonus of smokey links!

When you’re camping, easy to make meals really go a long way. Casseroles are usually an easy thing to throw together, especially at breakfast time. One thing that I tend to do when I make this pigs in a blanket bake is to prepare some things ahead of time. The recipe calls for mini smoked sausage links that are chopped, but you could also use crumbled sausage. To prepare ahead of time I like to cook and chop my sausage and mix together the egg mixture. If you wanted to make pancakes ahead of time so that they are homemade you certainly could. I have just found that the frozen, pre-made pancakes are easy to use when camping.

The pigs in a blanket bake does take a little time in the dutch oven, I always pour everything in and then light my coals. I took advice from Everyday Dutch Oven to know how many coals to use. It usually works well with 12 coals around the bottom and 18 on the top. This is a great recipe for camping, everyone we have made it for loves it and it provides some great energy for a full day of being outdoors.

Ingredients
  • 2 16 oz boxes frozen buttermilk pancakes
  • 4 eggs
  • 1½ cups half and half
  • 1 14 oz package cocktail-sized smoked link sausages, chopped
  • 1½ cups shredded Cheddar cheese
  • Maple syrup

Instructions
  1. Lightly oil or spray 12 inch dutch oven. You can also line with tin foil and spray that. Remove pancakes from boxes; unwrap and carefully separate. Set aside to partially thaw.
  2. In large bowl, beat eggs and half and half with whisk. Coarsely chop pancakes. Add pancake pieces and chopped sausage to egg mixture; toss to coat.
  3. Let stand 5 minutes. Pour mixture into prepared dutch oven.
  4. Bake at 350 degrees for 40 minutes. Sprinkle with cheese, cover and cook for 10-15 minutes more or until edges are set and light golden brown. Let stand for 10 minutes.
  5. Cut into squares; serve with maple syrup.
