A good meal while camping can go a long way. But cooking at a campsite can be difficult, messy and time consuming. My go to while camping is foil packet meals. It makes clean up simple, preparation is minimal and the meal always tastes great! These campfire foil packet potatoes are always a hit and are a great addition to any meal.

They are easy to prepare at the campsite but also offer the ease of preparing at home and keeping in the cooler. A lot of times at home I will make my foil packet meals and then keep them on ice in the cooler until it is time to cook.

CAMPFIRE FOIL PACKET POTATOES

INGREDIENTS:
8 potatoes, sliced
½ onion, chopped
½ teaspoon oregano
½ teaspoon rosemary
½ teaspoon thyme
salt and pepper to taste
¼ cup shredded cheese
¼ cup olive oil
Tin Foil

DIRECTIONS:
In order to cook in a reasonable amount of time slice the potatoes fairly thin. Tear off 2 pieces of tin foil, shiny side down. In a separate bowl mix potatoes, onion, olive oil and seasonings. Put the potato mixture on the tin foil. Bring the ends of the foil together and seal shut.

BAKING: Pre-heat the over to 350 degrees, place the foil packet on the oven rack and bake for 1 hour. Check the potatoes with a fork to see if they are soft. Add cheese and let it melt over the potatoes.

GRILL: Place the foil packet on a hot grill and close lid. Grill for 45 minutes. Check the potatoes with a fork to see if they are soft. Add cheese and let it melt over the potatoes.

CAMPFIRE: Make sure to use heavy-duty aluminum foil, place the foil packets in the hot coals and let cook for 45 minutes. Check the potatoes with a fork to see if they are soft. Add cheese and let it melt over the potatoes.
