Campfire Blackberry Cobbler

Dessert. It may just be one of the best things about camping. Anything cooked over the campfire is good, but dessert – now that’s where it’s at. Anything from Rolo S’mores to campfire donuts – if it’s over the fire, we are eating it. This Blackberry Cobbler is no exception. Plus it is delicious and everyone can just dig in and help clean that pan up.

This is one of my favorite recipes! It is pretty much fail proof and about as simple as a recipe can be. I know it by heart–three ingredients–one cup each of sugar, flour and milk, add almond extract, a stick of melted butter plus fruit and you have a delicious dessert sure to satisfy any camper in the crowd.

You can measure the dry ingredients at home and lock into a Ziploc bag so it is ready to mix in the bowl at the campsite. I pre-measure the milk into a lidded jar and keep in the cooler with the stick of butter. I have provided the recipe to be baked at home or at the campsite. The finished cobbler is dense and moist and easily transported after baking.

Ingredients
  • 1 stick Butter
  • 1 cup Sugar plus a dash for sprinkling on top of batter
  • 1 cup Self-Rising Flour
  • 1 cup Milk
  • ½ teaspoon Almond Extract or Almond Bakery Emulsion
  • 2 cups Blackberries (Fresh or Frozen)

Instructions
  1. Melt butter. Pour 1 cup of sugar and flour into a mixing bowl whisking in 1 cup of milk. Mix well. Pour the melted butter, almond extract into the mixture and whisk again until flour lumps disappear. Batter will be runny and shiny. Butter a baking dish if making before heading out at home, or grease a campfire appropriate fry pan with a lid. For easy clean up foil line the pan and grease the foil before pouring in the batter.
  2. Rinse and pat dry the blackberries. Pour the batter into the buttered baking dish or fry pan. Sprinkle blackberries over the top of the batter; distributing evenly. Sprinkle a dash of sugar over the top.
  3. Bake in the oven at 350 degrees for 1 hour, or until golden and bubbly. If cooking on a campfire cover pan and cook over coals or stove flame for approximately 25 minutes depending on heat of the fire. Check after 10 minutes and adjust time accordingly.
  4. If your pan does not have a lid, cover with aluminum foil. Insert fork in cobbler to test if done, if batter does not stick, it is ready to remove from fire. Serve warm and enjoy. I have made this cobbler with blueberries, raspberries and plan on trying cherries.
