Buffalo Chicken Meatball Sub

Buffalo chicken. Recipes that use this delectable meat combination have been blowing up the internet for some time now – and for good reason. Buffalo sauce is no longer just for chicken wings, the possibilities are nearly endless. Take these Buffalo Chicken Meatballs that we have stuffed in to a sub. It’s finger licking good, we promise.

Buffalo Chicken Meatballs Sub

Perfect for feeding a group, you can make a party sub with the buffalo chicken meatballs and feed a lot of people with not a lot of work. Just how we like it. There is just something about eating food that was cooked on a campfire and grabbing the foil packet out of the fire, unwrapping and biting in to this cheesy, buffalo sauce filled sub is a one of a kind experience.

To make things easier we usually create and cook the meatballs at home. But if you want to do everything at the site, just pop those meatballs in tin foil and bake in the campfire for about 29-25 minutes. Once you’ve made the meatballs, create the sauce by mixing buffalo and warmed butter. Toss the meatballs to coat then grab your large Italian Bread and spread blue cheese along the sides. Load with the meatballs and wrap it up in tin foil. Put the sub in the coals of the campfire for about 10 minutes or until it gets a bit crispy. Then it’s time to dig in. It makes quite a few sandwiches but from our experience, there won’t be any left. We originally found this recipe on the Pixelated Crumb blog and adapted it for our camping adventures.

Buffalo Chicken Meatballs Sub

Ingredients
  • 2 pounds ground all-white-meat chicken
  • 1 small onion, grated
  • 3 cloves garlic, minced
  • ½ cup parsley, chopped
  • ¼ cup blue cheese, chopped
  • Salt and freshly ground black pepper
  • olive oil, for drizzling
  • 4 tablespoons butter
  • 1 cup Franks Red Hot Buffalo sauce
  • ½ cup blue cheese crumbles
  • blue cheese dressing for dipping
  • 1 loaf Italian Bread

Instructions
  1. In a bowl, mix ground chicken, onion, garlic, parsley, and season with salt and freshly ground black pepper. Form into meatballs about an inch around.
  2. Arrange the meatballs in a pan with 1 tbsp of olive oil. Cook until the meatballs are cooked through and golden brown, about 20 minutes, turning the meatballs occasionally. You can also make over the campfire. Spray tin foil with cooking spray and arrange the meatballs. Seal the foil and put in the coals for at least 20 minutes or until cooked.
  3. When the meatballs are almost done, melt butter in a large skillet. Add the hot sauce and whisk to combine. Toss the meatballs in the hot sauce to coat.
  4. Spread blue cheese crumbles on both sides of the inside of the roll and add meatballs. Drizzle a bit of the extra buffalo sauce and blue cheese dressing over the top.
  5. Spray tin foil with cooking spray and wrap the entire sub. Set the sub in the coals of the fire and cook for 5-10 minutes or until cheese is melted and bread is toasted.
