It’s always nice to have a soup with a little kick to warm you up on those frigid winter days. This Green Chile Stew is super easy to make in the dutch oven or in the crock pot if you’re at home. It’s a delicious soup to enjoy after hours of being outdoors.

Ingredients
  • 1 lb ground beef
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • ½ onion, diced
  • 1 green pepper, diced
  • 4 potatoes, chopped
  • 6 cups vegetable broth
  • 1 (28 oz) can diced tomatoes
  • 1 can pinto beans
  • 2 cans green chilies
  • salt an pepper to taste

Instructions
  1. Chop the celery, carrots, onion and green pepper, set aside.
  2. Use a 5-quart Dutch Oven or cast iron pot and add your hamburger, cook until done and drain.
  3. Add the rest of your ingredients and bring to a boil. Let simmer for, covered, for 30 minutes.
  4. Serve with shredded cheddar cheese and tortilla chips.

Campfire Chicken Vegetable Soup

A hearty vegetable soup is always cherished in those cold winter months. Even if you don’t love vegetables when this soup comes out piping hot, you just can’t resist.

Ingredients
  • 2 chicken breasts, chopped
  • 1 tbsp olive oil
  • ½ onion, chopped
  • 2 carrots, chopped
  • 1 celery stalk, chopped
  • 1 cup mushrooms, sliced
  • 1 pkg frozen mixed veggies
  • 1 cup tomato sauce
  • 1 (14.5 oz) can stewed tomatoes
  • 5 cups vegetable broth
  • 1 cup pasta shells
  • salt and pepper to taste

Instructions
  1. Chop the onion, carrots, celery and mushrooms, set aside.
  2. Use a 5-quart Dutch Oven or cast iron pan and add the chopped chicken, cook until done and set aside.
  3. Add the 1 tablespoon olive oil to the pot. Sauté the onion, carrots, and celery for about 10 minutes. Add the mushrooms and cook until softened.
  4. Add mixed veggies, tomato sauce, stewed tomatoes and vegetable broth. Bring to a boil and let simmer 15 minutes. Add pasta shells and let simmer for 10 minutes or until pasta is al dente.

Homemade Potato Soup With Sausage

This is a soup just like our grandma used to make, throwing things she had on hand to make a delicious, rich soup to warm us up after hours of playing in the snow. With only 10 ingredients, this potato soup can be thrown together quickly.

  • 8 ounces Kielbasa sausage, chopped
  • 2 potatoes, chopped
  • ¼ onion, diced
  • 1 green peppers, diced
  • 1 can kidney beans, drained
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (10 oz) can beef broth
  • 1 tsp oregano
  • ½ tsp sugar
  • 1 tsp ground cumin

Instructions
  1. Chop the sausage, potatoes, onion, and green pepper.
  2. Use a 5-quart Dutch oven or cast iron pot and combine all of your ingredients. Bring to a boil and then let simmer for 45 minutes or until potatoes are soft.
